We have confirmed 13 Sony models that support eSIM. The newest include Xperia 10VII, Sony Xperia 1 VIII & Sony Xperia Ace III.
To check a Sony phone yourself, dial *#06#. If an EID number appears, the phone has eSIM. You can also look in Settings for an option to add an eSIM or a mobile plan.
The phone also has to be carrier-unlocked. A phone bought on a contract may be locked to its network, so ask your carrier before you travel.
